(Lyn's note: Please feel free to send us any pictures you'd like included.  If your photos are for sale, let us know and we will put them under that category.  We have a special section for that purpose, and have just added some art as well.  Check out Tom Baker's photos for sale.  He's the photographer who took that gorgeous photo in the Carefree Gardens Photo Contest that was both the judges' first pick and the public favorite.  It's now featured on the Town of Carefree website, and will be the cover of the 2014 Gardens calendar that will be for sale later this summer at Carefree Town Hall.  If anyone would like to buy a print of any of Herbert's photos, all profits will be donated to one of the local non-profit organizations.)  Here's the link to this week's Pictures of the Week.

Lyn:

FYI, I happened to talk this morning to Adrianne Larson, who you know is the court administrator.  During our conversation, I asked her how the merger was going.

In my two-year stint on the Town Council, which actually was longer than 24-months, since all of us ‘newbies” were prompted to get up to speed following the election and before being sworn in.  This involved a variety of activities, from a two-day training class put on by the Arizona League of Cities & Towns, to budget workshops, a ride-along with the Sheriff’s Office and time spent in the court with the judge, the administrator and the Town’s (part-time) prosecutor Tom Parascandola.

After getting sworn-in, and getting monthly reports, we also received the copies of the audits of the court, which rated it as one of the best.  We also renewed the contract with Judge Scull, and, if I recall correctly, he is one of the municipal court judges with the fewest decisions overturned by higher courts.  He is probably one of the nicest judges that one can find, who takes inordinate amounts of time to ensure that defendants are fully aware of what’s going on.

Adrianne told me that the merger is a huge task, and one that has not been done before except for one previous merger but that merger involved a court that only issued three tickets in a year!  I told her, that based on my knowledge of the Carefree Court, the merger would be accomplished to produce the same favorable results and audits for the combined court.

I do not think that our community is fully aware of what we have in our Town.  We are required to have a municipal court by state law, and they are an overhead that cannot be eliminated.  But, like the Town, the Town’s court is well-run and obtains results in a cost-efficient manner.

Re-imagines Trefoil Girl Scout Cookies

Girl Scouts–Arizona Cactus-Pine Council Cooks Up

First-Ever “Girl Scout Cookie Dessert Challenge” With Local Chefs

CAREFREE, Arizona, USA (January 22, 2013) The Girl Scouts–Arizona Cactus-Pine Council (GSACPC) is pleased to announce it is  partnering with more than a dozen Arizona restaurants for its first-ever “Girl Scout Cookie Dessert Challenge.” Chefs from some of the state’s most popular restaurants will use their culinary prowess to re-imagine one of the six beloved brands of Girl Scout cookies – Do-Si-Dos, Tagalongs, Samoas, Savannah Smiles, Trefoils or Thin Mints – into a custom dessert menu item.

Chef Amy Binkley of Café Bink chose the Trefoil cookies and created the Trefoil Jamboree Push Pop that features popcorn, marshmellows, caramel, chocolate, and of course, the extra special Trefoil crunch. The dessert will be sold exclusively throughout February at Café Bink for $5 with $1 of the proceeds going to the Girl Scouts and the renovations at Camp Sombrero.

The recipe for the Trefoil Jamboree Push Pop is included below, and those that purchase Trefoil Girl Scout Cookies are encouraged to follow the recipe and make the push pops at home.

TREFOIL JAMBOREE PUSH POP RECIPE:

Trefoil Munch:

12C Popped Popcorn

2C Butter

4C Brown Sugar

1C Corn Syrup

2t Salt

1t Baking Soda

2t Vanilla Extract

4C Trefoil Cookies, Crumbled

3C Chocolate Chips

4C Mini Marshmallows

Preheat oven to 300 degrees. Place popped popcorn on a cookie sheet that has been lined with parchment paper. In a medium sauce pot cook butter, brown sugar, corn syrup and salt for 5 minutes on high heat. Add baking soda and vanilla extract and pour over popcorn coating the popcorn evenly. Bake for 10 minutes, remove from oven a stir the mixture carefully, then return to the oven for an additional 10 minutes. Remove from oven and stir in cookie crumbles, chocolate chips and marshmallows.

Sugar cookie Ice Cream:

4C Milk

4C Cream

1 ea. Vanilla bean

1/2 C crumbled trefoil cookies

1C sugar

24 ea. Egg yolks

1/4 t. salt

In a large bowl whisk the egg yolks and sugar together. Combine milk, cream, vanilla, and cookies in a large pot and bring to a simmer. Once it has come to a simmer pour into a blender and puree cookies until smooth. Slowly pour the cream mixture into the eggs whisking the whole time. Put the mixture back into the sauce pot and slowly stir until it becomes slightly thick(the consistency of cold cream)(Do not boil). Strain through a chinoise and cool in an ice bath or place in fridge and stir every few minutes so it cools quickly. Spin in an ice cream maker until it’s the consistency of soft serve ice cream. To assemble the Push Pop:

Start with a layer of ice cream ice cream, add some of the trefoil munch, and top with another layer of ice cream. Place back in freezer until ready to enjoy. When ready to serve place cookie munch on place, and put push pop face down on it so it stays upright.

Push pops available for purchase through JB Prince.

Each participating restaurant of the Girl Scout Cookie Challenge, whose chef selected their cookie flavor via a random drawing, has agreed to feature its dessert on its menu from February 1 to February 28, 2014, with a portion of the proceeds benefitting the transformation of their Camp Sombrero.
